Remarks: Raw shell eggs stored above green sauce & tortillas in the upright cooler. Ready-to-eat potentially hazardous foods prepared & then frozen were not date marked: empanadas, tamales, yuca. Foods date marked at the time of inspection. Unlabeled chlorine sanitizer in bucket and in spray bottle. Ensure sanitizer is at approved concentrations.

Remarks: Employee drinks shall be in disposable cup with lid and straw and stored to prevent contamination of food and food equipment. Fruit/vegetable dicer, stored on shelf with other clean equipment, contained food debris. Food equipment ran through warewash machine not properly sanitized. Cold-held potentially hazardous foods not maintained below 41F.

Remarks: Employee filled a pitcher with water at the hand sink. Training provided. Water discarded; pitcher taken to dish area. Food encrusted on pans stored clean on the dish shelves.
