Observations and corrective actions:

  • Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw country ham stored above ready-to-eat foods (tortillas, lettuce) in the walkin cooler. Raw chicken stored above raw fish & veggies patties in the walkin freezer. Raw ham moved below ready-to-eat foods; raw chicken moved next to the fish on bottom shelf in the walkin freezer; veggie patties moved to shelf above raw animal foods. Food shall be protected from cross contamination by: 1)storing raw animal foods below/away from produce/cooked/ready-to-eat foods; 2) storing/ separating raw animal foods by the minimum cooking temperature.  Corrected On-Site.  New Violation.
  • Remarks: While employee was portioning french fries, some of them fell out of the wrapper, onto his bare hands & then back into the hot holding unit. French fries were discarded at the time of inspection. Discussed using a suitable barrier such as gloves.

Observations and corrective actions:

  • Violation of Code: [.04(6)(h) ] Egg rolls dated 2/28 and cooked shrimp dated 3/3. Dates are prep dates. Foods kept longer than 7 days in facility. Food discarded. Cold-held potentially hazardous ready-to-eat foods shall be properly date-marked and used or discarded within 7 days.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(6)(c) ] Lighter stored above prep cooler containing food. Lighter removed. Toxic substances/chemicals shall be properly stored to prevent contamination of food, equipment, utensils and linens.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(d) ] Bulk products (ie. flour, sugar, msg, salt) removed from their original packages, and not labeled with the common name of the food. Containers labeled. Food storage containers shall be properly labeled with common name of food.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(k) ] Knife stored between prep cooler and counter. Knife removed. In-use utensils shall be properly stored between uses.  Corrected On-Site.  New Violation.
  • Remarks: Screen back door has air gaps around door. Keep main back door closed until air gaps are fixed.
