'Mold-Like Substance' in Ice Machine, Food Residue on Slicer and Other Violations Noted During Recent Inspections

A look at the most recent restaurant inspections by the East Metro Health District.

  • Violation of Code: [.04(6)(f) ] Hot-held potentially hazardous foods not maintained above 135oF; no time controls/documentation in place. See temperatures marked '*'. Foods discarded. Hot-held potentially hazardous food must maintain a temperature of 135F or higher.  Corrected On-Site.  New Violation.
  • Violation of Code: [.02(1)(d) ] Food service permit not posted prominently at all times in a location approved by the Health Department. Food service permit shall be posted in public view at all times.  New Violation.
  • Violation of Code: [.10(2)(g) ] Most current inspection report not posted in public view as required. Inspection report dated 7/2/2012 posted. Most current inspection report shall be posted prominently for public. The top one-third of a copy of the current inspection report is not visible through the drive-thru window of the facility. Top 1/3 of most current inspection report shall be posted in drive-thru.  New Violation.

Observations and corrective actions:

  • Violation of Code: [.05(7)(b) ] Ice machine contains mold-like substance around ice chutes. Ice machine cleaned every 6 months per person-in-charge. Increase cleaning frequency to avoid soil buildup on food contact surfaces.  Repeat Violation.
  • Violation of Code: [.05(7)(a)1 ] Vegetable slicer and dicer contain food residue and stored on shelf as clean. Equipment cleaned during inspection. Food contact surfaces shall be cleaned to sight and touch.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(f) ] Cold-held potentially hazardous foods not maintained below 41oF; no time controls/documentation in place. See temperatures marked '*'. Foods placed in walk-in cooler to cool. Food had been removed from walk-in cooler approximately 1.5 hours. Cold-held potentially hazardous food must maintain a temperature of 41F or below.  Corrected On-Site.  New Violation.
  • Violation of Code: [.06(5)(n) ] Sliding doors of outside receptacle left open when garbage not being discarded. Doors closed. Garbage receptacles shall remain closed at all times when not in use.  Corrected On-Site.  New Violation.
  • Violation of Code: [.06(5)(o),(p) ] No drain plug in outside garbage receptacle. Ensure drain plug isinstalled ata all times.  New Violation.
  • Remarks: Notes- Obtain pitchers with lids if pitchers will be kept in customer walkin or seating area; or keep pitchers back behind counters. Minimize food content amount in cooler between grill and conveyor oven. Informal inspection will occur within 10 days to check ice machine and drain plug installment. Violation of provision .05(7)(b) 'food contact surfaces: cleaning frequency' on next inspection may result in suspension of food service permit.
